Born from passion and nurtured with love, this delicious spirit is the brainchild of two visionary co-founders, Stephanie Jordan being one of them. As she sat in a charming café in Amsterdam chatting with me via Google Meet, her eyes sparkled with pride and excitement as she delved into the story of her beloved "baby," Avallen.
Like many in the hospo industry who have a nomadic tendency, I too found myself living abroad to explore the world outside of our tiny island nation. After many twists and turns that life naturally brings, I ended up in Santa Catalina of all places. During my time in paradise, I sailed across oceans on superyachts and landed a role as a brand ambassador for a world-renown alcohol conglomerate.

Although this was many moons ago, there is one bar that survived the thick of Covid and still holds a special place in my heart. If you’re a fellow bartender seeking refuge in Palma, I have no doubt that you’ll make this cocktail haven your new watering hole.
Introducing Chapeau 1987, the hidden gem nestled in the vibrant streets of Palma de Mallorca, Spain. As one of the Balearic Islands just a short hop away from Ibiza and Barcelona, Palma is a haven for sun-seekers and adventurers alike. But amidst this lively city, I made Chapeau 1987 my home away from home.
During the peak heat of summer, the nights surpassed the romanticised ‘balmy’ stage. I distinctly remember walking home at 2am and passing a digital clock that would more often than not, read 40 degrees. Dripping in sweat during these uncomfortably hot nights, the long outdoor whisky bar was my absolute sanctuary for cooling down before my sticky walk home. And in the winter months, my friends and I would huddle in the booths and chat the night away while sipping on magnificent cocktails.
Although Chapeau 1987 is a word-class establishment, it has a modest charm that exudes a genuine warmth and happiness - this is what makes it such a cosy and unforgettable place. The tight-knit team of talented bartenders have proudly represented Spain on the global stage so you can trust me when I say, they know their craft inside out.

Their skills and camaraderie are evident in every pour, showcasing their dedication to their craft. And if you're lucky, you might stumble upon one of their exciting pop-up events, featuring renowned bartenders from around the world. These collaborations bring a touch of international flair to the already vibrant atmosphere here at Chapeau or just down the street at their sister establishment Ginbo.
When it comes to their menu, it truly is a testament to culinary creativity. Featuring a carefully curated selection of liquids, flavours and techniques, I would happily sip away at whatever they would concoct in awe. Whether you're a cocktail connoisseur or a curious newcomer, you'll be delighted by the surprising combinations and the skilled craftsmanship behind each drink. As for pricing, yes, European countries can be expensive, especially in the Balearic Islands. It’s paradise, after all! But unlike nearby tourist traps, you will not be disappointed in spending your money and time here at Chapeau.
If you're a fellow New Zealander planning a European adventure, make sure to put this cocktail bar on your must-visit list. When you step foot into this Palma treasure, be sure to say "Kia Ora" from Jaz. You'll be welcomed with open arms, and the bartenders will undoubtedly make you feel right at home in this charming corner of Spain and leave you with a lasting impression.
