Born from passion and nurtured with love, this delicious spirit is the brainchild of two visionary co-founders, Stephanie Jordan being one of them. As she sat in a charming café in Amsterdam chatting with me via Google Meet, her eyes sparkled with pride and excitement as she delved into the story of her beloved "baby," Avallen.
A clarified milk punch is a way of having a drink that has that silky smoothness of a milky drink without the heaviness. Adding the ingredients of a cocktail (with some sort of acid or citrus component) to milk or cream of sorts will make it curdle. Straining the drink through the curds and a fine strainer will leave you with a clearer drink and a change in texture and flavour. In this case, I’ve seen a heap of cream or milk punches, but not that many utilising flavoured milks. So of course, I went in with strawberry milk.
Scapegrace black has a delicious fruitiness about it and this is balanced out by the juniper. The berry from the Chambord and the Violette liqueur has a mad delicious sharp floral smooth taste. The strawberry milk adds a silky smoothness without being too much, flavour-wise. It almost accentuates a berry plum wine like flavour, while the soda lengthens it with a nice touch of zing.
Ingredients:
120 ml Scapegrace Black
60ml Chambord
30ml Lemon juice
60ml Strawberry milk
15ml Violette liqueur
Soda water.
Method:
Add all ingredients except the milk to one vessel (shaker tin, mixing glass).
In the other, place a coffee filter or cheesecloth. Add the milk to the rest of the ingredients, then pour everything through the coffee filter.
Let filter, then chill in the fridge. Serve cold.
Served in a chilled Nick and Nora.
