Amidst the busiest period of the European summer, I had the privilege of delving into the world of wines and spirits with Jessica Dunnett, one-half of the team steering the course of Onshore Cellars. Nestled in the charming coastal town of Antibes in the South of France, Jess and her husband have breathed life into a remarkable venture – a cellar and distribution company that embodies their shared passion for luxury liquids. Despite the high demands of the superyacht industry for wine in August, Jess graciously shared her insights, offering a glimpse into the journey of Onshore Cellars' and insights into following one’s passion where there is a demand.

When did you start your business and why?

We started the company in 2015 after working in the superyacht industry for many years as Chief Stewardess and Officer. We saw a gap in the market for a quality-focused wine provisioner who understood the unique demands of the industry, so we started Onshore Cellars.

What were the main hurdles you had to overcome and how did you do it?

The main challenges were initially around logistics, particularly ensuring safe and timely delivery to yachts located in remote or hard-to-reach locations or to yachts that are constantly moving and changing ports. Building strong relationships with reliable logistics partners was key as well as creating a strong in-house logistic system.


What is the most requested wine this European summer?

This European summer, Provence rosés have been incredibly popular, particularly Château d'Esclans' Whispering Angel and Minuty 281. And of course, Champagne. Ruinart Blanc de Blanc is our top seller at the moment.

In your opinion, what makes French Rosé supreme? 

It’s all about the balance. The Mediterranean climate and the soil composition in the Provence region yield grapes with a perfect balance of acidity and flavour. They are fresh, fruity and elegant.


Are you seeing a rise in certain spirits for cocktail making?  

Yes, we've noticed an increasing interest in craft spirits for cocktail making. Particularly, artisanal gins and tequilas - Casamigos and Clase Azul being the most requested by far!

How often do New Zealand and Australian wines get requested on superyachts?

New Zealand and Australian wines are requested quite regularly. The fresh and vibrant Sauvignon Blancs from Marlborough and bold, full-bodied Shiraz from Barossa Valley are particularly sought after. Cloudy Bay has been our biggest seller so far with 150 bottles sold last month.


Are there any trends with New World vs Old World preferences?

Preferences between New World and Old World wines can often come down to individual taste, but we've noticed a growing interest in New World wines, perhaps due to their innovative approach and the variety they bring.

What is the best business advice you have ever been given?

The best business advice I've been given is "always listen to your customers. They are your best source of learning and improvement."


What is your current favourite wine/spirit/cocktail?


It changes all the time but I am currently enjoying the 2016 Paul Hobbs Russian River Pinot Noir. This wine is from California and is full of decadent fruit and spice. Perfect for a Cote de boeuf on the barbeque. And as for a spirit or cocktail, I am loving an Aperol Spritz! But I add a big squeeze of fresh orange juice to mine. So refreshing!

How much does food dictate a yacht’s wine order for a trip?

It varies from client to client. Sometimes, we are completely dictated by the meals and are asked to pair wines with the chefs’ menus but most of the time, our clients order wines based on their taste preference. It would then be the service department’s job to match the food and wine together on board. We are always available to assist with suggestions though!

Any advice to aspiring bartenders who may want to enter the superyacht world?

For aspiring yacht bartenders, staying updated with the latest trends in wines and spirits, and being able to create personalised experiences are vital. Also, the ability to work in confined spaces and maintain composure under pressure is critical.


Do you see a gap in the market for any particular category in wine and spirits as far as the luxury world goes?

In terms of gaps, there's a growing interest in natural and biodynamic wines, and while there are some high-quality options available, the luxury segment could certainly be expanded.
